Tomorrow I’m making a prime rib. It’s my first, and I’m a little nervous because it sounds too easy. The recipe just says rub it down with salt, pepper and garlic, and cook it for 25 minutes. Next you turn the oven off and leave it closed for 2 hours. It’s supposed to be perfect! Now, I just need to figure out how to leave the oven closed, since I imagine the smell will be intoxicating, and demand I open open the door for a big sniff and a peek at my masterpiece. I’m serving it with mashed potatos, artichokes and lemon coconut cupcakes with buttercream frosting for dessert.
I can’t wait to eat!
